Psuedo Healthy Cookies

I haven't been able to bake for quite a while mostly because work was so busy and a little off the hook that I was just too tired by the end of the day to do any baking.  Well things are starting to ease up at least for this week and so I thought I would try something new.  After watching Jamie Oliver's food revolution i am really having a change of how i view food and am attempting to make some changes in diet.  Here's a cookie recipe that I found (and then added some other fun things to it)... it has whole wheat food, agave nectar (instead of sugar), dark chocolate, cranberries, pecans and coconut... it's only semi healthy because there is still butter and eggs - but kind of necessary!








Semi-Healthy Trail Mix Cookie

Ingredients:
1 and 1/2 Cups Agave Nectar
3 & 1/8 Cups Whole Wheat Flour (only 3 c for lower elevations)
1/2 Cup Butter (1 stick) melted
2 Eggs
1 tsp. Vanilla Extract
1/4 tsp. Salt
1 tsp. Baking Soda
3/4 tsp. Baking Powder (use 1 tsp for lower elevations)
1 12 oz pkg. dark chocolate chips
1/2 cup chopped pecans
¾ c. shredded coconut
1 c. of dried cranberries

Preparation:
Preheat your oven to 375 degrees. Dump your eggs, agave, and melted butter, and vanilla in a large mixing bowl and beat with a hand mixer until everything is well incorporated. In a separate bowl, combine your dry ingredients: flour, salt, baking powder, baking soda. Slowly add your dry ingredients into your wet ingredients and stir with a wooden spoon until your cookie batter is formed. Add the chocolate chips, pecans, coconut and cranberries and mix well. Drop tablespoon sized balls onto an ungreased non-stick baking sheet and bake for 10-12 minutes. Devour while still warm.
