Cookie Challenge '11 - Recipe 1: Eggnog Snickerdoodles

The very first suggestion I got was from Cally Rockwell, for eggnog snickerdoodles... sounded like a good new year's day (1st) cookie to try.  I had never made snickerdoodles before, let alone eggnog ones!  They turned out pretty good.  Below is the regular recipe, after making them I would change the recipe just a little bit for altitude adjustments (I will include those as well)!  eat and enjoy! :)




1/2 c butter, softened
1/2 c shortening
1 3/4 c sugar, divided
2 eggs
1/2 tsp rum extract
2 3/4 c all-purpose flour
2 tsp cream of tartar
1 tsp baking soda
1/4 tsp salt
2 tsp ground nutmeg

(for altitude adjustments – decrease baking soda to ¾ tsp and add ¼ c. flour)

Directions
In a large bowl, cream the butter, shortening and 1 1/2 cups sugar until light and fluffy. Beat in eggs and extract. Combine the flour, cream of tartar, baking soda and salt; gradually add to creamed mixture and mix well.
                  In a shallow bowl, combine the nutmeg and remaining sugar. Roll dough into 1-in. balls; roll in sugar mixture. Place 2 in. apart on ungreased baking sheets.
Bake at 400° for 10 minutes or until lightly browned. Remove to wire racks to  cool. Yield: about 6 dozen.
